Tortilla de Patatas
Ingredients:
1 cup olive oil
4 Large Potatoes (cut into 1/8 inch
slices)
1 large onion (sliced thinly)
4 Large eggs
Salt & Pepper
Preparation:
toss potatoes and onions in 1 cup olive oil, ensure they are completely covered and none are sticking together.
Salt and Pepper to taste.
Then cook over medium heat till potatoes are tender.
Turn the potato's frequently to ensure they do not brown.
Drain and let cool to room temperature. Keep 3 table spoons of oil. for later.
Mix eggs till fluffy and add potatoes mix. Let sit for 15 minutes.
Heat 2 table spoons of oil till smoking and add mix to pan. Spread mix evenly through out pan quickly.
Lower heat med-high. Shake pan while cooking.
When the egg begins to brown on the bottom you will need to flip it.
you have options when flipping.
You can slide it on to a plate then flip it back on to the pan.
Or you can flip it onto another pan of the same size.
Which ever you choose heat the remaining table spoon or olive oil in the pan till it smokes before putting the mix in it.
When the eggs brown on the other side flip it on a plate and let cool before eating.
